Chili Achaar
Ingredients
- 1 1/2 cups fresh red thai chilies
- 1/2 cup fresh green thai chilies
- 1/2 cup cilantro
- 1/2 cup mint leaves
- 4 cloves garlic, sliced
- 1 in. ginger, minced
- 2 tablespoons sesame seeds, roasted
- 2 tablespoons musturd seeds, roasted
- 1 teaspoon cumin seeds
- 1 tablespoon mango powder
- 1 teapoon pepper corn
- 1 teaspoon timur (szchwan pepper)
- 2 tablespoons musturd oil
- 2 tablespoons lemon juice
- 1 teaspoon suger
- 1/2 teaspoon asafoetida
- Salt to taste
Instructions
In a blender, combine all the ingredients into a paste with a desired
texture. If desired hot and sour, increase the amount of lemon juice (using tamarind paste is a bit more authentic).
